STAUFFERS RECIPES - SEAFOOD

SCALLOP SALAD
Delicious scallops and fresh, crisp salad taste great together!
Ingredients:
•1 lb. Sea Scallops
•3 Tbsp. Berio Olive Oil
•1 Tbsp. Butter, Lite
•1 tsp. minced garlic
•1 tsp. basil
•Salt and pepper to taste
•1/2 cup grape tomatoes
•1 cucumber, sliced
•1 can Black Pearl Ripe Olives
•1 pepper, sliced
•1 small onion, sliced
•1 package Stella D'Oro Bread Sticks
•1 package Stauffers salad
•1/3 cup balsamic vinegar
•1/3 cup Berio Olive Oil
Place butter and oil in a pan, add scallops, and cook 3-5 minutes per side. Add garlic, basil, salt and pepper. Saute a few more minutes, and set aside. On a plate, place the salad, olives, tomatoes, peppers, and onion. Place the scallops on top of the salad. In a small jar, mix vinegar and olive oil, and drizzle over the salad. A tasty healthy meal during the rush of the work week. Serve with bread sticks. Enjoy!
