CHICKEN VEGGIE DELIGHT
Chicken sauteed in Italian salad dressing, and then added to delicious vegetables and pasta - wonderful!
Ingredients:
•3 boneless, skinless chicken breasts (cut into 1/2 inch pieces)
•1 egg (beaten)
•1 cup 4C Seasoned Bread Crumbs
•1/4 cup 4C Grated Cheese Topping, Parmesan & Romano
•1/2 cup Newmans Own Salad Dressing, Light Italian
•1 onion (cut up)
•1 can black olives (drained)
•1 cup grape tomatoes, cut in half
•1 cup broccoli, cut up
•1 lb. box Mueller Penne Rigate Pasta
Cook the pasta, drain and set aside in a bowl. Wash the chicken, and pat dry. Cut the chicken into 1/2 inch pieces, place in egg, and then in bread crumbs. In a skillet, pour in 1/2 cup salad dressing. Add the chicken to the skillet, and cook 7 to 8 minutes. Add the veggies, cook and stir another 10 minutes, and place over pasta. Great on a cold night!
