STAUFFERS RECIPES - VEGETARIAN

CHEESE PIEROGIES AND VEGETABLES
A delicious variation on an old favorite, your family will love it!

Ingredients:
•1 bag Mrs. T’s Potato 4 Cheese Mini Pierogies
1 large red onion (cut in small pieces)
•1 large pepper (cut in small pieces)
•1 bag broccoli florets
•1 Tbsp. Basil
•4 Tbsp. Olive Oil
1 Tbsp. crushed garlic
•1 can of Del Monte Peeled and Diced Tomatoes (drained)
•salt and pepper to taste
•Non Fat Sour Cream (garnish)
•Finely Shredded Sharp Cheese (garnish)

In a large pan, place olive oil and cut up vegtables. Sauté until veggies are tender. Add 1 bag of pierogies and continue to sauté for 5 to 6 minutes. Add drained tomatoes with basil, salt, pepper and garlic. Cook for 7 to 8 minutes and serve. Use sour cream and cheese to garnish.
Serve Del Monte whole kernel corn as a side dish. Drain corn and place in a skillet sprayed with Pam. Add 4 Tbsp. of Balsamic Vinegar, sauté, and season to taste.
