STAUFFERS RECIPES - POULTRY

SOUTHWEST LASAGNA
One of our favorites, lasagna, with a delicious southwestern flavor. Your family will love it!

Ingredients:
•1 Whole Roasting Chicken (4 lbs.)
•2 cups Kraft Natural Monterey Jack Cheese
•1 jar Chi Chi's Salsa Medium Original
•2 cans refried beans
•4 Tablespoons Wesson Vegetable Oil
•1 teaspoon cayenne pepper
•1 teaspoon basil
•1 teaspoon chili powder
•1 Tablespoon crushed garlic
•1 package tortillas
•lettuce (optional)
•sour cream (optional)

•Cook chicken at 40 minutes a pound at 350 degrees. When done, remove from oven and let cool. When chicken is cool, discard the skin, and cut up into small pieces.

In a bowl, mix oil, pepper, basil, chili powder and garlic. Add chicken to this mixture and coat. To assemble, put a layer of tortillas in the lasagna pan, spread with refried beans, then salsa, then chicken mixture, then some of the cheese, Cover with tortillas and start over again until the pan is full. Top the dish with cheese. Bake at 350 degrees for 30 minutes. You can serve the lasagna over a bed of lettuce with sour cream on top.
