STAUFFERS RECIPES - BEEF

LONDON BROIL AND VEGGIE RELISH
A great new twist on everyone's favorite london broil.

Ingredients:
•1 cup Ken's Lite Northern Italian Salad Dressing with Basil and Romano Cheese
•2 pound London Broil, fresh in our Stauffers Meat Department
•1/2 cup fresh peppers (chopped)
•1/2 cup onions (chopped)
•1 can (14 oz.) Del Monte Diced Tomatoes (drained)
•3 Tbsp. Sugar
•1/4 cup white wine vinegar
•Salt and pepper to taste
•1 can Hanover Asparagus Spears
•1 pkg. Bakers Dozen Potato Pierogies

Rinse and pat dry London Broil. On a cutting board, slice London Broil very thin. In a skillet on the stove, place a cup of the dressing and add London Broil. Cook 3 to 5 minutes per side until the meat isn't pink. In another pan, while the meat is cooking, place the diced tomatoes (drained), peppers, onions, sugar, vinegar and pepper. Cook untill it comes to a boil, and veggies are medium to soft, and remove. Follow package directions for pierogies and asparagus. Place relish over the pierogies, asparagus and London Broil and enjoy! When time permits, marinate the London Broil overnight and you will be ready to go. When really rushed, stop by the Stauffers salad bar - all veggies are cut, ready for you to take and go
