STAUFFERS RECIPES - POULTRY

CHICKEN AND POTATO - ONE PAN EASY
Fresh veggies, chicken and potatoes - nutritious and delicious!
Ingredients:
•4 boneless skinless chicken breasts
•1 egg (beaten)
•6 Tbsp. flour
•2 to 3 medium potatoes
•1 can Green Giant Whole Kernel Corn (drained)
•6 Tbsp. Cooking Oil
•1/4 cup chicken broth
•1/2 cup Heluva Good Dip Ranch Flavor
•1 cucumber
•1 tomato
•1 pepper
•Salt and pepper to taste
•Breakstone Cottage Cheese, Small Curd Non Fat
•1 can Fruit Pear Halves
First, scrub the potatoes, and, with a fork, place several holes on top. Put potatoes in the microwave, cook for 10 minutes, remove and set aside. While the potatoes are cooking, rinse and pat the chicken dry. Place the chicken between two sheets of wax paper and pound out with a wooden mallet or tool of choice. Place the chicken in egg, and then flour to coat, then place in hot pan with oil. Cook 5 minutes per side, or until fully cooked. (By pounding the chicken, you make it thinner, to cook faster.) Remove the chicken from the pan, and drain the drippings only. Place the pan back on the stove, and add chicken broth, ranch dip, corn (drained), and potatoes, cut up with skins on. Mix everything together and heat, adding the chicken a few minutes later. Serve with fresh veggies, with cottage cheese and fruit for dessert - healthy and delicious!
