CHICKEN AND BRUSCHETTA
Chicken prepared in a great new way, with English muffins and delicious bruschetta topping.
Ingredients:
•1 package Thomas Original Plain English Muffins
•2 large boneless skinless chicken breasts, cut in strips
•1 jar Italian Salad Dressing
•1/2 cup Natural Shredded Cheese, Cheddar
•1 cup Roland Bruschetta
•1 can Mushrooms, Pieces and Stems
•1 cup 4C Bread Crumbs, Seasoned
•1/2 cup sweetened dried cranberries
•2 eggs (beaten)
•1 large onion
•1 large pepper
•1 tsp. lemon pepper
Clean the chicken, and pat dry. Cut the chicken in strips, coat with beaten eggs and then with bread crumbs. Place the chicken in a pan with 1/2 cup Italian Dressing. Cook for 7 to 8 minutes per side. When the chicken is done, add bruschetta, dried cranberries, mushrooms, onion and pepper, cut up. Season with lemon pepper. Cook for 5 to 8 minutes and serve over
English muffins. Muffins are great if brushed with Italian dressing and cooked in a cleaned skillet until brown on each side, and served with chicken and bruscheta - yummy!! Sprinkle cheese over the top before serving.
