PINEAPPLE CHICKEN
This delicious variation on chicken, including pineapples, will be a true crowd pleaser!
Ingredients:
• 2 Split Skinless Chicken Breasts
•3 Tbsp. Wesson Cooking Oil
•1 Jar Dole Fruit Pineapple Chucks in Plastic Jar
•2 Tbsp. soy sauce
•1/2 tsp. garlic powder
•1 tsp. cornstarch
•1 red pepper, cut in strips
•Salt and Pepper to taste
Clean chicken, and cut away from the bone in strips. Place oil in skillet, and add chicken. Cook the chicken for 10 minutes, until browned and cooked. While the chicken is cooking, reserve pineapple juice in a jar, and place pineapple chunks and pepper into the pan with the chicken - continue to stir. Add soy sauce, garlic powder, cornstarch, salt and pepper to the reserved juice, stir, and add to the chicken in the skillet. Cook until the sauce thickens. Serve over rice or baked potatoes.
