STUFFED VEAL WITH SPINACH
A quick and easy meal with tender veal, stuffed with a delicious spinach mixture.
Ingredients:
•4 Veal Cutlets (you can have butcher pound them out thin for stuffing)
•2 Tbsp. Heluva Good French Onion Dip
•1 package Hanover Frozen Spinach (thawed and drained)
•4 slices provolone cheese
•1 Tbsp. crushed garlic
•2 Tbsp. Shurfine Vegetable Oil
•1/4 cup Roland Roasted Red Peppers
•1 Tbsp. Roland Dijon Mustard
•1/2 cup vegetable broth
•4 Tbsp. shurfine flavored bread crumbs
•toothpicks
•lettuce
•sliced tomatoes
Wash and pat dry thin veal cutlets, and set aside. In a bowl, combine spinach (which is thawed and drained thoroughly), onion dip, garlic, red peppers (cut up and drained), Dijon mustard, bread crumbs, and mix thoroughly. Place oil in a pan, place a slice of provolone cheese and spinach mixture onto cutlet, and roll up, using a toothpick to secure. Place in a hot pan and cook 10 minute per side, or till done. When cutlets are done, pour in veggie broth and cook 1 minute. Remove and use this juice as gravy for the cutlets. Place cutlets on a bed of lettuce, then adding gravy. Serve with sliced tomatoes and enjoy!
