LONDON BROIL PASTA DISH
London broil with angel hair pasta and fresh tomatoes is delicious and one dish easy!
Ingredients:
•3 to 4 lb. Natural Light Top Round London Broil
•1 - 16 oz. bag Birds Eye Frozen Green Beans
•1 - 16 oz. Linguine Pasta
•1 cup brown sugar
•1/2 cup Worcheshire sauce
•1/2 cup vegetable oil
•2 Tbsp. dry mustard
•salt and pepper to taste
•2 Tbsp. lemon juice
•2 fresh tomatoes, sliced
Make marinade of brown sugar, Worcheshire sauce, oil, mustard, salt and
pepper, and lemon juice. Mix, and set aside 1/4 cup. With the rest of the marinade, place in a bag with the London broil, seal and let marinate overnight.
The next night, remove London broil from bag and slice into thin pieces. Cook with
1/2 the reserved marinade, at least 4 to 5 minutes a side. When the meat is done, add the frozen green beans, the rest of the marinade, and saute 3 to 4 minutes. While cooking this meal, follow the package directions to cook the pasta. In a casserole dish, place the pasta, meat, green beans and fresh tomatoes. Serve and enjoy!
Leftover London broil is great for lunch the next day, with some veggies, or added to a salad. I like adding tomatoes to many meals for their nutritional value.
