SALSA MACARONI AND CHEESE
Wonderful macaroni and cheese, a rich cheese sauce with just a touch of salsa - delicious!
Ingredients:
•1 lb. Pasta, Elbow Macaroni
•1/2 Cup Tostitas Salsa, Mild
•1 bag Tostitas Tortilla Chips, Bite Size Rounds
•2 Sticks Butter Quarters, Regular
•1/2 cup flour
•6 to 8 cups of 2% low fat milk
•2 Cups Kraft Natural Finely Shredded Cheese, Mozzarella
•2 Cups Kraft Natural Shredded Cheese, Sharp Cheddar
•2 Cups Kraft Natural Shredded Cheese, Yellow Cheddar
•Salt and Pepper to taste
Cook macaroni according to package directions. While the macaroni is cooking, start the cheese sauce in another pan on the stove. Combine milk, flour, butter, cheeses and salt and pepper. When it boils (stirring constantly), add 1/2 cup salsa. Drain macaroni, pour cheese over and serve, all within 30 minutes or less.
Reserve 1 cup of cheese sauce for dipping. It is a great way for the kiddos to enjoy dipping celery, carrots, apples, and pretzel sticks. I always make extra cheese sauce just for dipping, or adding over chicken - enjoy!
