At Stauffers of Kissel Hill we are focused on food safety so that you can feel confident when shopping for your family’s food. From the time food is delivered to our stores we check for quality, freshness, and safety before it even enters our Fresh Foods stores. We manage food safety through monitoring storage temperatures, preparation, cooking temperatures, cleaning and sanitizing, dates, and allergen monitoring.
Our Food Safety Team
It takes a team of people working hard every day to keep you safe behind the scenes. By law you only need one person with a Manager Food Safety Certificate to be available at all times during the operation of a licensed food facility. If that person is not on site, they must be available by phone. This is the minimum standard and we do not think it is enough especially as a family owned business servicing customers, friends, and family members throughout our community.
We have a training program in place that involves having our Fresh Foods Chief Operating Officers, Buyers, Supervisors, General Managers and Assistant Managers receive their Manager Food Safety Certificates. And we go beyond that….each of our Department Managers, Assistant Department Managers, Chefs and Prep-cooks are all certified in food safety. And since we believe food safety is important, we provide additional training for every employee who handles food that needs Time and Temperature Control for Safety (TCS).
Although the Department of Agriculture visits our stores for a full inspection yearly, we perform our own monthly self-inspection by a person who has the Managers Food Safety Certification using the Department of Agriculture standards. We have our refrigeration and freezer equipment wired to a central monitoring system. This extensive system allows us to keep track of all case temperatures and if there is ever a problem, we can react so quickly all of our food it protected and remains safe. During our inspections, we manually take temperatures of our foods using a digital thermometer. Our many preparation areas also take the temperature of the foods daily to ensure our handmade products are cooked and cooled safely. The internal inspection is very rigorous to exceed the minimum standards established by the state.
Afterwards, the Food Safety team reviews the results to ensure that all programs and policies are not just written down on a piece of paper, but are actually followed through with and achieved. We have the checks in place to ensure our staff is professional trained and as part of their personal evaluations the staff is rated on their food safety performance. All of this work is performed behind the scenes as we strive daily to provide the safest food we can.
We get them every day. We receive calls and emails on a daily basis where each item must be investigated to verify if we carry it, and if we do, it, and it is removed from the shelf within 30 minutes of notification. We have developed a communication plan to get the instructions to our stores to empty the shelves and hold or destroy the product bases on the manufactures instructions. We place signs up at the location of where the item was located so you are aware of the recall. In addition, Our Customer Service Desk will have an information sheet of any product we have had to pull from our shelves due to a potential problem. If you hear of a recall on the radio or TV and you may have purchased the product, just stop at the customer service desk and we will be happy to share the information with you. Fresh Meat Department
Many times you hear announcements of meat or ground meat recalls. You can be assured that our fresh meats are of the highest quality. Stauffers has its own meat program where selected animals are culled for us base on our high level of expectations. Then a third party grades our beef to ensure we have consistent, high quality product coming into our stores. Before the beef is shipped, e-coli testing is performed and it does not ship until our Buyer receives conformation of the test results!
Did you know we grind our own ground beef? We do not use the pre-ground product which is called tube grinds. We take whole pieces of meat, cut them into chunks and grind it. Now that is fresh! We take it one step further by placing the date and time on our fresh ground beef label so you know when it was made ensuring confidence you are getting the freshest ground beef.
